  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup vegetables (bell peppers, carrots, or spinach)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, combine the coconut milk, vegetable broth, soy sauce, sriracha, garlic, and ginger. Bring to a simmer over medium heat (about 3-5 minutes).
  2. Add the noodles to the pot and cook according to package instructions (usually 3-5 minutes).
  3. In the last two minutes of cooking, toss in the vegetables and stir well.
