  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup eggnog
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Cream the butter and sugars until light and fluffy.
  2. Add eggs, eggnog, and vanilla, mixing until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine the wet and dry mixtures, then stir in oats.
  5. Scoop dough onto parchment-lined baking sheets.
  6. Bake at 350°F (175°C) for 10-12 minutes until edges are golden.
  7. Allow cookies to cool, then prepare the buttercream.
  8. Beat butter until creamy, then add eggnog, vanilla, nutmeg, and powdered sugar, mixing until fluffy.
