- 3 cups powdered sugar
Instructions
- Cream the butter and sugars until light and fluffy.
- Add eggs, eggnog, and vanilla, mixing until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine the wet and dry mixtures, then stir in oats.
- Scoop dough onto parchment-lined baking sheets.
- Bake at 350°F (175°C) for 10-12 minutes until edges are golden.
- Allow cookies to cool, then prepare the buttercream.
- Beat butter until creamy, then add eggnog, vanilla, nutmeg, and powdered sugar, mixing until fluffy.
- Assemble the cream pies by spreading buttercream between two cookies.
- Enjoy immediately or chill for later.
Notes
