Description

Ingredients

  • 1 cup (200 g), packed brown sugar
  • 1 tablespoon (15 g) ground ginger
  • 1 teaspoon (2 g) ground cinnamon
  • 1/2 teaspoon (1 g) ground nutmeg
  • 1 teaspoon (5 g) baking soda
  • 1/2 teaspoon (3 g) salt
  • 2 large eggs
  • 1 cup (240 ml) buttermilk
  • 1/2 cup (113 g) unsalted butter, melted
  • 2 cups diced apples (about 2 medium apples)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, brown sugar, ginger, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, beat the eggs and mix in the buttermilk and melted butter.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the diced apples gently.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes until a toothpick comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving.

Store at room temperature for up to 3 days or refrigerate for up to a week. Serve with vanilla ice cream or whipped cream.
