  • 1 cup chopped nuts (optional)
  • Caramel icing (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, beat together the granulated sugar, brown sugar, oil, and eggs until smooth. Stir in the vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Gently fold in the chopped apples and nuts (if using).
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake completely on a wire rack before topping with caramel icing.
