Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, beat together the granulated sugar, brown sugar, oil, and eggs until smooth. Stir in the vanilla extract.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Gently fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake completely on a wire rack before topping with caramel icing.
