Instructions
- Preheat your oven to 400°F (200°C) and generously grease a mini muffin pan with butter.
- Mix the cornmeal, all-purpose flour, sugar, baking powder, and salt in a large mixing bowl.
- Combine the milk, eggs, melted butter, and honey in a separate bowl until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Spoon the batter into the mini muffin pan, filling each cup about 2/3 full.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
- Drizzle with additional honey if desired.
Notes
For a more rustic texture, swap regular cornmeal for stone-ground cornmeal. Use high-quality local honey for better flavor.
