Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 1 cup pure maple syrup
  • ½ cup brown sugar, packed
  • ½ cup golden raisins
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 cups mini marshmallows
  • 1 cup chopped pecans
  • 4 tablespoons butter or vegan butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil or steam sweet potatoes until tender, about 15-20 minutes.
  3. Drain and mash sweet potatoes in a large mixing bowl, then mix in maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
