Description

A dry version of traditional Tom Yum soup, these noodles are bursting with vibrant flavors and aromas, perfect for a quick and flavorful meal.


Ingredients

  • 8 oz dry rice noodles
  • 6 oz pork tenderloin, thinly sliced
  • 2 teaspoons soy sauce
  • 1/2 teaspoon granulated sugar
  • 6 oz lean ground pork
  • 1 teaspoon fish sauce
  • 1 tablespoon garlic oil
  • 2 teaspoons lime juice
  • 1 1/2 teaspoons fish sauce
  • 1 1/4 teaspoons sugar
  • 1/2 teaspoon chicken or pork bouillon powder (optional)
  • 1/2 to 1 teaspoon roasted chili flakes
  • 5.3 oz Asian-style meatballs, cut into bite-sized pieces
  • 1/3 cup roasted peanuts, coarsely ground
  • 2 tablespoons ground dried shrimp (optional)
  • 2 teaspoons fried garlic
  • 2 green onions, chopped
  • 20 sprigs cilantro, chopped
  • 2 cups bean sprouts
  • Wedges of lime for serving
  • 8 cloves garlic, chopped
  • 1/3 cup neutral oil

Instructions

  1. Soak the rice noodles in room temperature water for about 30 minutes until pliable.
  2. Prepare the marinated pork by combining sliced pork with soy sauce and sugar.
  3. Cook the ground pork in boiling water with fish sauce until fully done, then drain.
  4. Make the fried garlic by heating oil and cooking the chopped garlic until golden.
  5. Mix the noodle sauce in serving bowls with lime juice, fish sauce, and sugar.
  6. Cook the meatballs and marinated pork in the same boiling water until cooked.
  7. Prepare the noodles by boiling soaked noodles until chewy, then toss in noodle sauce.
  8. Assemble the dish with noodles topped with ground pork, meatballs, peanuts, garlic, cilantro, green onions, and bean sprouts.
  9. Serve with lime wedges for added brightness.

Notes

Adjust chili flakes for your preferred spice level. Store leftovers separately in airtight containers.
