- 2 cups almond flour
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, at room temperature
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Your choice of jam (raspberry is traditional)
Instructions
- In a large mixing bowl, cream together the room temperature butter and powdered sugar until light and fluffy (about 2-3 minutes).
- Add in the egg yolk, vanilla extract, almond extract, cinnamon, and salt. Mix until combined.
- Gradually add the almond flour and all-purpose flour, mixing just until the dough comes together.
- Form the dough into a flat disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
- Roll out the chilled dough on a floured surface until it’s about 1/4 inch thick. Cut out shapes for the cookie base, then use a smaller cutter to cut out the center for the top layer.
- Bake for 8-10 minutes or until they’re just starting to turn golden at the edges.
- Once cooled, spread your choice of jam on each whole cookie, then gently place the cut-out cookie on top. Dust with powdered sugar for the final touch.
- Present at room temperature and enjoy!
