- 15.25 oz Red Velvet Cake Mix
- 2 Large Eggs, Room Temperature
- 1/2 Cup Vegetable Oil
- 1 Teaspoon Vanilla Extract
- 3/4 Cup Black Cocoa Powder
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, and vanilla extract; stir until just combined.
- Pour the black cocoa powder into a shallow bowl for rolling the cookies.
- Scoop about 1.5 tablespoons of dough, roll into a ball, and coat in the black cocoa powder.
- Place on the baking sheets about 2 inches apart.
- Bake for 10-12 minutes until edges are set and centers are soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chill dough for 30 minutes if you’d like to prevent spreading during baking. Store in airtight container at room temperature for up to one week.
