- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin purée
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine in a bowl the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream together butter, granulated sugar, and brown sugar until fluffy.
- Beat in pumpkin, eggs, and vanilla until well blended.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan.
- Mix the sugar and cinnamon for the topping, and sprinkle over the batter.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes before transferring to a wire rack.
