Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin purée
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine in a bowl the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Cream together butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in pumpkin, eggs, and vanilla until well blended.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Mix the sugar and cinnamon for the topping, and sprinkle over the batter.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool for 10 minutes before transferring to a wire rack.
