Description
Delicious and comforting burritos filled with seasoned meat and refried beans, smothered in a spicy green chili sauce.
Ingredients

- 1 1/2 lbs ground beef (or shredded chicken, pork, or beef)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 oz) can refried beans
- 1 (4 oz) can diced green chilies
- 6 large flour tortillas
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups chicken broth
- 1 (7 oz) can diced green chilies
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/2 cup sour cream
- Optional toppings: Sliced green onions, fresh cilantro, sliced jalapeños, sour cream
Instructions
- In a large skillet, cook ground beef over medium heat until browned (about 6-8 minutes).
- Add diced onion and minced garlic, cooking until onion is soft (about 2-3 minutes).
- Drain any excess fat, then stir in taco seasoning, diced green chilies, and refried beans, cooking for another 2-3 minutes.
- Preheat oven to 375°F (190°C).
- On each tortilla, divide meat and bean mixture evenly, sprinkle with shredded cheese, roll tightly, and place seam-side down in a greased 9×13-inch baking dish.
- In a saucepan, melt butter, stir in flour and cook until golden (1-2 minutes). Whisk in chicken broth and add remaining green chilies, cumin, garlic powder, salt, and pepper; simmer for 5 minutes.
- Remove from heat, stir in sour cream until smooth.
- Pour green chili sauce over burritos and top with remaining shredded cheese.
- Bake for 20 minutes until cheese is melty and bubbly.
- Garnish with green onions, cilantro, jalapeños, and sour cream as desired before serving.
Notes
These burritos can be stored in the fridge for up to 3 days or frozen for up to 2 months. Customize with preferred proteins or toppings.
