Description

Delicious and comforting burritos filled with seasoned meat and refried beans, smothered in a spicy green chili sauce.


Ingredients

  • 1 1/2 lbs ground beef (or shredded chicken, pork, or beef)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can refried beans
  • 1 (4 oz) can diced green chilies
  • 6 large flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 (7 oz) can diced green chilies
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • Optional toppings: Sliced green onions, fresh cilantro, sliced jalapeños, sour cream

Instructions

  1. In a large skillet, cook ground beef over medium heat until browned (about 6-8 minutes).
  2. Add diced onion and minced garlic, cooking until onion is soft (about 2-3 minutes).
  3. Drain any excess fat, then stir in taco seasoning, diced green chilies, and refried beans, cooking for another 2-3 minutes.
  4. Preheat oven to 375°F (190°C).
  5. On each tortilla, divide meat and bean mixture evenly, sprinkle with shredded cheese, roll tightly, and place seam-side down in a greased 9×13-inch baking dish.
  6. In a saucepan, melt butter, stir in flour and cook until golden (1-2 minutes). Whisk in chicken broth and add remaining green chilies, cumin, garlic powder, salt, and pepper; simmer for 5 minutes.
  7. Remove from heat, stir in sour cream until smooth.
  8. Pour green chili sauce over burritos and top with remaining shredded cheese.
  9. Bake for 20 minutes until cheese is melty and bubbly.
  10. Garnish with green onions, cilantro, jalapeños, and sour cream as desired before serving.

Notes

These burritos can be stored in the fridge for up to 3 days or frozen for up to 2 months. Customize with preferred proteins or toppings.
