Description

Delicious homemade burritos filled with tender chicken, zesty salsa, and smothered in a creamy green chile sauce.


Ingredients

  • 3 cups cooked chicken, chopped or shredded
  • 1 1/2 cups salsa
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano, crushed
  • 1 1/4 cups shredded cheddar cheese
  • 2 green onions, chopped
  • 6 large flour tortillas
  • Olive oil, for brushing
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 clove garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano, crushed
  • Salt and freshly ground black pepper, to taste
  • 4 ounces diced green chilies, mild
  • 1/3 cup shredded cheddar cheese, for topping
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with foil or parchment paper.
  2. In a large bowl, combine the cooked chicken, salsa, cumin, oregano, shredded cheddar cheese, and chopped green onions. Mix well.
  3. Spoon a heaping 1/2 cup of the chicken mixture into the center of each tortilla, fold in the sides, and roll tightly. Place seam-side down on the baking sheet.
  4. Brush each burrito with olive oil.
  5. Bake for 20-25 minutes or until golden and crispy.
  6. To make the green chile sauce, melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 3 minutes. Stir in the garlic and cook for 30 seconds, then whisk in chicken broth, cumin, oregano, salt, and pepper until thickened. Fold in green chilies, cheese, and sour cream.
  7. Switch oven to high broil, spoon sauce over burritos, top with cheese, and broil for 2-3 minutes until bubbly.
  8. Serve hot with sides of Mexican rice or salad.

Notes

Great for meal prepping and can be frozen. Adjust spices for heat preference.
