Description

A comforting Smothered Chicken recipe with tender chicken and rich savory gravy, perfect for family gatherings or cozy weeknight dinners.


Ingredients

  • 4 chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Optional: Thyme or rosemary

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, and brown them for 5-7 minutes per side.
  3. Remove the chicken and sauté the chopped onion and garlic for 3-4 minutes.
  4. Sprinkle the flour over the onion and garlic, stirring for 1 minute.
  5. Pour in the chicken broth, whisking continuously to avoid lumps.
  6. Return the chicken to the skillet, cover, and simmer for 20-25 minutes.
  7. Add fresh herbs in the last five minutes if using.

Notes

For a creamy version, add a splash of heavy cream just before serving. This dish is also excellent as leftovers!
