- 4 chicken breasts
- 1 cup low-sodium chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
- Optional: Thyme or rosemary
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, and brown them for 5-7 minutes per side.
- Remove the chicken and sauté the chopped onion and garlic for 3-4 minutes.
- Sprinkle the flour over the onion and garlic, stirring for 1 minute.
- Pour in the chicken broth, whisking continuously to avoid lumps.
- Return the chicken to the skillet, cover, and simmer for 20-25 minutes.
- Add fresh herbs in the last five minutes if using.
Notes
For a creamy version, add a splash of heavy cream just before serving. This dish is also excellent as leftovers!
