Decadent, guilt-free s’mores blondies capturing the flavors of classic campfire treats, made vegan and paleo-friendly.
Ingredients

- 1/2 cup cassava flour (75g)
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsweetened almond butter
- 1/4 cup maple syrup
- 2 Tbsp molasses
- 1 tsp vanilla extract
- 1/3 cup chopped dark chocolate (about 2 oz)
- 1/2 cup chopped marshmallows (or mini marshmallows)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×4 inch loaf pan with parchment paper.
- Mix the dry ingredients in a large bowl: cassava flour, baking soda, cinnamon, nutmeg, and salt.
- Combine the wet ingredients in another bowl: almond butter, maple syrup, molasses, and vanilla extract. Mix until smooth.
- Combine the wet mixture into the dry mixture until just combined, being careful not to overstir.
- Add in the chopped dark chocolate and marshmallows, folding until evenly distributed.
- Prepare to bake by pressing the dough into the loaf pan and smoothing the top.
- Bake for about 14 minutes, aim for slightly underbaked in the center.
- Cool in the pan before transferring to a wire rack; chill for about an hour in the fridge before cutting into squares.
Notes
Store leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.
