Ingredients
4 cups Frozen diced hash brown potatoes (thawed)
2 cups Smoked sausage (sliced into 1/2-inch rounds)
1.5 cups Shredded sharp cheddar cheese
1 cup Sour cream
1 can Cream of mushroom soup (10.5 oz)
0.5 cup Whole milk
0.5 cup Chopped yellow onion
2 tablespoons Unsalted butter (melted)
1 teaspoon Garlic powder
1 teaspoon Salt
0.25 teaspoon Black pepper
0.5 teaspoon Paprika (optional)
1 teaspoon Fresh parsley (chopped, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In skillet over medium heat, brown sausage slices 2-3 minutes per side. Drain on paper towels.
- In large bowl, whisk together soup, sour cream, milk, garlic powder, paprika, salt and pepper.
- Layer half the potatoes, half the onions, half the sausage, and half the cheese in baking dish. Repeat layers.
- Pour sauce mixture evenly over top. Cover with foil and bake 50 minutes.
- Mix breadcrumbs with melted butter. Uncover casserole, sprinkle with crumbs, and bake 15-20 more minutes until potatoes are tender and top is golden.
- Let stand 10 minutes before serving. Garnish with parsley.
Notes
- For crispier sausage, broil 2-3 minutes after final baking
- Can substitute sweet potatoes for half the russets
- Add 1 cup frozen peas or corn between layers for extra veggies
- Freezes well before baking – add 15 minutes to cooking time
