Description

A hearty, comforting casserole featuring smoky sausage, tender potatoes, and a creamy cheese sauce, baked to golden perfection – the ultimate one-dish meal for chilly nights!


Ingredients

4 cups Frozen diced hash brown potatoes (thawed)

2 cups Smoked sausage (sliced into 1/2-inch rounds)

1.5 cups Shredded sharp cheddar cheese

1 cup Sour cream

1 can Cream of mushroom soup (10.5 oz)

0.5 cup Whole milk

0.5 cup Chopped yellow onion

2 tablespoons Unsalted butter (melted)

1 teaspoon Garlic powder

1 teaspoon Salt

0.25 teaspoon Black pepper

0.5 teaspoon Paprika (optional)

1 teaspoon Fresh parsley (chopped, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In skillet over medium heat, brown sausage slices 2-3 minutes per side. Drain on paper towels.
  3. In large bowl, whisk together soup, sour cream, milk, garlic powder, paprika, salt and pepper.
  4. Layer half the potatoes, half the onions, half the sausage, and half the cheese in baking dish. Repeat layers.
  5. Pour sauce mixture evenly over top. Cover with foil and bake 50 minutes.
  6. Mix breadcrumbs with melted butter. Uncover casserole, sprinkle with crumbs, and bake 15-20 more minutes until potatoes are tender and top is golden.
  7. Let stand 10 minutes before serving. Garnish with parsley.

Notes

  • For crispier sausage, broil 2-3 minutes after final baking
  • Can substitute sweet potatoes for half the russets
  • Add 1 cup frozen peas or corn between layers for extra veggies
  • Freezes well before baking – add 15 minutes to cooking time
