Description
A hearty, comforting soup that combines smoky sausage with sweet apples and creamy potatoes in a savory broth. This autumn-inspired dish balances rich, sweet, and tangy flavors for a satisfying one-pot meal.
Ingredients
- 1 tbsp olive oil
- 12 oz smoked sausage, sliced into rounds
- 1 medium yellow onion
- 2 cloves garlic
- 4 cups chicken or vegetable broth
- 3 medium potatoes
- 1 large apple
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and black pepper
- 1/2 cup heavy cream
- 2 tbsp chopped fresh parsley
Instructions
- Brown sausage in a large pot over medium-high heat (about 5 minutes). Remove with slotted spoon and set aside.
- Add olive oil to the pot. Sauté onion and celery for 5 minutes until softened. Add garlic and cook 1 minute more.
- Stir in apples and potatoes, cooking for 2 minutes to lightly caramelize.
- Pour in chicken stock and water. Add mustard, thyme, smoked paprika, bay leaf, and reserved sausage. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
- Remove bay leaf. Stir in cream (if using) and apple cider vinegar. Season with salt and pepper.
- Serve hot, garnished with fresh parsley. Excellent with crusty bread.
Notes
- For lighter version: Omit cream or use half-and-half
- Leave apple peels on for extra texture and nutrients
- Flavors develop overnight – excellent as leftovers
- Freezes well (without cream) for up to 2 months
