Description

Ingredients

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced into rounds
  • 1 medium yellow onion
  • 2 cloves garlic
  • 4 cups chicken or vegetable broth
  • 3 medium potatoes
  • 1 large apple
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • Salt and black pepper
  • 1/2 cup heavy cream
  • 2 tbsp chopped fresh parsley

Instructions

  1. Brown sausage in a large pot over medium-high heat (about 5 minutes). Remove with slotted spoon and set aside.
  2. Add olive oil to the pot. Sauté onion and celery for 5 minutes until softened. Add garlic and cook 1 minute more.
  3. Stir in apples and potatoes, cooking for 2 minutes to lightly caramelize.
  4. Pour in chicken stock and water. Add mustard, thyme, smoked paprika, bay leaf, and reserved sausage. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
  6. Remove bay leaf. Stir in cream (if using) and apple cider vinegar. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley. Excellent with crusty bread.

  • For lighter version: Omit cream or use half-and-half
  • Leave apple peels on for extra texture and nutrients
