- 1 loaf baguette
- 4 large eggs
- 4 ounces cream cheese
- 4 ounces sharp cheddar cheese
- 2 tablespoons mayonnaise
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces smoked salmon
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped chives
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Slice the baguette into 1/2-inch thick rounds and brush both sides with olive oil.
- Bake the bread for 8–10 minutes until golden and crisp.
- Place the eggs in a saucepan covered with cold water and bring to a gentle boil.
- Transfer the eggs to an ice bath after cooking for 10 minutes to cool.
- Blend the peeled eggs with cream cheese, cheddar cheese, mayonnaise, lemon juice, salt, and pepper until smooth.
- Pipe the egg-cheddar mousse onto the cooled crostini.
- Top each crostini with a slice of smoked salmon and garnish with dill and chives.
Notes
For extra flavor, consider adding capers or using different herbs like basil. Store the mousse separately for best results.
