Crispy crostini topped with a fluffy egg-cheddar mousse and delicate smoked salmon, perfect for any gathering.


Ingredients

  • 2 tablespoons olive oil
  • 1 loaf baguette
  • 4 large eggs
  • 4 ounces cream cheese
  • 4 ounces sharp cheddar cheese
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces smoked salmon
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped chives

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch thick rounds and brush both sides with olive oil.
  3. Bake the bread for 8–10 minutes until golden and crisp.
  4. Place the eggs in a saucepan covered with cold water and bring to a gentle boil.
  5. Transfer the eggs to an ice bath after cooking for 10 minutes to cool.
  6. Blend the peeled eggs with cream cheese, cheddar cheese, mayonnaise, lemon juice, salt, and pepper until smooth.
  7. Pipe the egg-cheddar mousse onto the cooled crostini.
  8. Top each crostini with a slice of smoked salmon and garnish with dill and chives.

Notes

For extra flavor, consider adding capers or using different herbs like basil. Store the mousse separately for best results.
