Ingredients

  • 1.25 lb ground turkey
  • 1 large yellow onion, diced
  • 3 carrots, sliced into 1/4 inch rounds
  • 2 celery stalks, sliced
  • 1/2 head cabbage, cut into 1 inch chunks
  • 14.5 oz diced tomatoes
  • 1 tbsp tomato paste
  • 2.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1.5 tsp salt
  • 0.75 tsp black pepper
  • 0.5 tsp paprika
  • 1 bay leaf
  • 32 oz chicken broth

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground turkey and cook for 5–7 minutes until no longer pink. Add the diced onion and cook for an additional 2–3 minutes.
  2. While the turkey browns, slice the carrots, celery, and cut the cabbage into chunks. Add all vegetables to the slow cooker along with the cooked turkey mixture.
  3. Pour in the chicken broth and diced tomatoes.
  4. Sprinkle in garlic powder, onion powder, salt, black pepper, paprika, and bay leaf. Stir everything together.
  5. Cover and cook on high for 4 hours or low for 6-7 hours.
  6. Once done, remove the bay leaf, adjust seasoning to taste, ladle into bowls, and serve hot.

Notes

For added depth, sear the turkey well before adding to the slow cooker. Incorporating fresh herbs like thyme or parsley at the end enhances freshness.
