Ingredients

- 2 pounds red potatoes
- 1/2 tsp cream of tartar
- 1 cup water
- 1/2 cup yellow onion, chopped
- 1 cup grated cheddar cheese
- 1 can cream of chicken soup (10.5 ounces)
- 1 pound fully cooked ham, cubed or sliced
- 1/2 teaspoon paprika
Instructions
- Wash the red potatoes thoroughly, cut each in half, and slice into 1/4-inch thick rounds.
- Dissolve the cream of tartar in 1 cup of water and toss the sliced potatoes to prevent browning before draining.
- Spray the slow cooker liner with cooking spray.
- Layer half of the sliced potatoes, half the chopped onions, 1/2 cup grated cheddar cheese, and half of the ham in the slow cooker.
- Add the remaining potato slices, the rest of the ham and cheese, and spoon the cream of chicken soup evenly on top.
- Sprinkle with paprika, cover, and cook on low for 6-7 hours or on high for 4 hours, stirring a couple of times for even cooking.
- Season with salt and black pepper before serving.
Notes
For an even richer flavor, sauté the onions in a bit of butter before adding them to the slow cooker. Leftovers can be refrigerated for up to 4 days.
