Description

A creamy comfort dish made with tender potatoes, savory ham, and a rich sauce, perfect for family dinners and potlucks.


Ingredients

Scale
  • 2 pounds red potatoes
  • 1/2 tsp cream of tartar
  • 1 cup water
  • 1/2 cup yellow onion, chopped
  • 1 cup grated cheddar cheese
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 pound fully cooked ham, cubed or sliced
  • 1/2 teaspoon paprika

Instructions

  1. Wash the red potatoes thoroughly, cut each in half, and slice into 1/4-inch thick rounds.
  2. Dissolve the cream of tartar in 1 cup of water and toss the sliced potatoes to prevent browning before draining.
  3. Spray the slow cooker liner with cooking spray.
  4. Layer half of the sliced potatoes, half the chopped onions, 1/2 cup grated cheddar cheese, and half of the ham in the slow cooker.
  5. Add the remaining potato slices, the rest of the ham and cheese, and spoon the cream of chicken soup evenly on top.
  6. Sprinkle with paprika, cover, and cook on low for 6-7 hours or on high for 4 hours, stirring a couple of times for even cooking.
  7. Season with salt and black pepper before serving.

Notes

For an even richer flavor, sauté the onions in a bit of butter before adding them to the slow cooker. Leftovers can be refrigerated for up to 4 days.
