- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 2 cups frozen tater tots
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large skillet over medium heat for 5-6 minutes until no pink remains and then drain excess fat.
- In your slow cooker, layer the browned beef, rinsed black beans, drained corn, diced tomatoes with green chilies, and taco seasoning; mix until thoroughly coated.
- Neatly arrange frozen tater tots on top, covering as much surface area as possible.
- Slow cook on low heat for 4-6 hours.
- About 30 minutes before serving, sprinkle shredded cheddar cheese over the tater tots and cover to melt.
- Serve hot and enjoy your hearty casserole.
Notes
Leftovers can be stored in an airtight container for up to 3-4 days. This casserole can also be frozen for up to three months.
