Description

A hearty comfort dish that’s perfect for busy families, combining ground beef, black beans, corn, and crispy tater tots.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 2 cups frozen tater tots
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 5-6 minutes until no pink remains and then drain excess fat.
  2. In your slow cooker, layer the browned beef, rinsed black beans, drained corn, diced tomatoes with green chilies, and taco seasoning; mix until thoroughly coated.
  3. Neatly arrange frozen tater tots on top, covering as much surface area as possible.
  4. Slow cook on low heat for 4-6 hours.
  5. About 30 minutes before serving, sprinkle shredded cheddar cheese over the tater tots and cover to melt.
  6. Serve hot and enjoy your hearty casserole.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days. This casserole can also be frozen for up to three months.
