  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Heat a skillet over medium-high heat. Add a dash of oil and sear the chicken until golden brown, about 3-5 minutes per side.
  2. Transfer the seared chicken to the slow cooker. Add your diced carrots, celery, potatoes, minced garlic, and bay leaves.
  3. Sprinkle on the thyme, salt, and pepper. Give it a gentle stir to distribute the flavors evenly.
  4. Carefully pour in the chicken broth. If using flour for thickening, whisk it with a little broth before adding, or simply sprinkle it over the top and stir in.
  5. Cover your slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  6. Remove bay leaves before serving. Taste and adjust seasoning if needed, and serve hot, garnished with fresh parsley.
