Description

A delicious Slovak poppy seed roll featuring soft dough wrapped around a sweet and nutty poppy seed filling, perfect for any occasion.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons active dry yeast
  • ¾ cup warm milk
  • stick unsalted butter (softened)
  • 2 tablespoons granulated cane sugar
  • 1 egg yolk
  • 1 egg white (set aside)
  • ⅛ teaspoon fine salt
  • 1 ½ cups finely ground poppy seeds
  • ¾ cup milk
  • ½ cup white granulated sugar
  • 1 teaspoon spiced rum
  • 2 teaspoons freshly grated lemon zest
  • 1 teaspoon vanilla bean paste
  • ¼ teaspoon ground cinnamon
  • ⅓ cup golden raisins
  • 1 tablespoon honey
  • ¼ teaspoon cardamom
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Combine warm milk and yeast in a small bowl. Let sit for 5-10 minutes until frothy.
  2. In a large bowl, combine flour, sugar, and salt. Add the yeast mixture, softened butter, and egg yolk; mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 1 hour until doubled in size.
  5. In a saucepan, combine poppy seeds, milk, sugar, honey, and spices. Heat over medium-low for about 15 minutes until thickened. Let cool.
  6. Stir in spiced rum, vanilla, lemon zest, and raisins into the cooled poppy seed mixture.
  7. Punch down the risen dough and roll it out into a rectangle about ¼ inch thick.
  8. Spread the poppy seed filling over the dough, leaving an inch around the edges.
  9. Starting from one long side, roll the dough into a log shape and pinch the seams to seal.
  10. Preheat oven to 350°F (175°C). Place the roll on a greased baking sheet and brush with beaten egg white. Bake for 25-30 minutes until golden brown.
  11. Let cool on a wire rack for 30 minutes before slicing. Dust with powdered sugar if desired.
