- 1 ½ pounds red mini creamer potatoes
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Parsley flakes (for garnish)
Instructions
- Preheat your oven to 385°F (195°C).
- Line a baking sheet with parchment paper.
- Thoroughly wash the mini potatoes under cold water.
- In a bowl, mix 4 cups of cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato and place them in the lemon water.
- In another bowl, combine the olive oil, remaining lemon juice, and all seasonings until well mixed.
- Drain the carved potatoes and toss them in the seasoning mixture.
- Place the seasoned potatoes face up on the baking sheet and bake for about 30 minutes until golden brown and tender.
- Garnish with parsley flakes before serving.
Notes
These potatoes can be customized with different seasonings or cheese. They are best served fresh but can be refrigerated for up to 3 days.
