Description

Delightful mini potatoes carved into spooky skull shapes, perfect for Halloween festivities.


Ingredients

  • 1 ½ pounds red mini creamer potatoes
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes (for garnish)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Thoroughly wash the mini potatoes under cold water.
  4. In a bowl, mix 4 cups of cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato and place them in the lemon water.
  5. In another bowl, combine the olive oil, remaining lemon juice, and all seasonings until well mixed.
  6. Drain the carved potatoes and toss them in the seasoning mixture.
  7. Place the seasoned potatoes face up on the baking sheet and bake for about 30 minutes until golden brown and tender.
  8. Garnish with parsley flakes before serving.

Notes

These potatoes can be customized with different seasonings or cheese. They are best served fresh but can be refrigerated for up to 3 days.
