- 6 boneless, skinless chicken thighs
- 1/2 cup buttermilk (room temperature)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 3/4 cup cornstarch or all-purpose flour (for coating)
- 2–3 tbsp oil, for pan-frying (vegetable or canola oil)
- 1/2 cup mayonnaise (preferably Kewpie)
- 1/4 cup Thai sweet chili sauce
- 1–2 tbsp sriracha (adjust to taste)
- 1 tbsp honey or maple syrup (optional)
- Juice of 1/2 lime
- Chopped green onions (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a bowl, combine the chicken thighs with buttermilk, garlic powder, onion powder, salt, and pepper. Let marinate for at least 15 minutes.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Set aside.
- Remove chicken from the marinade, dredge in cornstarch, and set aside.
- Heat oil in a skillet over medium-high heat. Add chicken thighs and cook for 4–5 minutes on each side until golden brown and cooked through.
- Drizzle or toss the chicken in the prepared sauce, garnish with green onions and sesame seeds, then serve hot.
Notes
For best results, marinate the chicken longer and monitor oil temperature during frying to achieve a perfect crisp.
