Description

Ingredients

  • 1/3 cup olive oil
  • 4 garlic cloves, minced
  • 1.5 tbsp lime juice
  • 1 tbsp Cajun spice
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • 1 lb shrimp, peeled and deveined
  • 3 bell peppers, sliced
  • 1/2 onion, sliced
  • 1/4 cup cilantro, chopped
  • 3 tsp lime juice
  • 8 flour tortillas
  • Jalapeño ranch
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, minced garlic, 1.5 tablespoons lime juice, Cajun spice, salt, and chili powder until well combined.
  2. Slice the Vegetables: Dice the bell peppers and slice the onion, then set aside the chopped cilantro.
  3. Marinate the Shrimp and Veggies: Divide the marinade in half, marinate shrimp in one bowl and vegetables in another for 10-15 minutes.
  4. Cook the Shrimp: Heat a skillet over medium-high heat, add the marinated shrimp and cook until pink and opaque.
  5. Sauté the Vegetables: In the same pan, sauté the marinated vegetables until tender and slightly caramelized.
  6. Combine Everything: Return the shrimp to the skillet, add cilantro and additional lime juice, and stir for about 30 seconds.
  7. Warm the Tortillas: In a separate pan or microwave, warm the tortillas until soft.
  8. Assemble and Serve: Divide the shrimp and vegetable mixture among the tortillas and top with jalapeño ranch, sliced avocado, and lime juice.

Notes

Leftover shrimp fajitas can be stored in an airtight container in the fridge for up to 2 days. Reheat gently to maintain tenderness.
