Ingredients

  • 2 pounds large shrimp (2124 count), peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon salt for cooking water
  • 2/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter plus more to grease the pan
  • 1/2 cup panko bread crumbs
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 2 1/2 quart casserole dish generously with butter.
  2. Bring a large pot of salted water to a boil. Add 1 tablespoon of Old Bay seasoning.
  3. Once boiling, add the shrimp and cook until they turn opaque, about 30 seconds. Do not overcook!
  4. Drain the shrimp and transfer them to a large mixing bowl.
  5. Stir in the mayonnaise, garlic powder, and pepper, blending until the shrimp are coated evenly.
  6. Fold in the mozzarella and cheddar cheese until well mixed.
  7. Transfer the shrimp mixture into the prepared casserole dish, spreading it out evenly.
  8. Melt the butter in a small pan over low heat. Stir in the panko bread crumbs until they are all coated.
  9. Sprinkle the buttery bread crumbs over the shrimp mixture in the casserole.
  10. Bake uncovered for 13-15 minutes, or until the center reaches 145°F.
  11. Broil for 1-2 minutes to achieve a golden-brown topping.
  12. Allow the casserole to rest for 15 minutes before serving.

Notes

For best flavor and texture, use full-fat mayonnaise and consider combining different cheeses.
