- 1 lb (450g) fresh shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 egg
- 2 tbsp cornstarch or flour
- 1 tbsp fish sauce
- 1 tsp sugar
- 1/2 tsp black pepper
- 1/4 cup chopped cilantro or green onions
- 1/2 tsp baking powder (optional, for extra fluffiness)
- Oil for frying
Instructions
- Pat dry the shrimp and finely chop or pulse in a food processor (leave some texture).
- In a bowl, mix shrimp with garlic, shallot, egg, cornstarch, fish sauce, sugar, and black pepper.
- Stir in chopped cilantro or green onions until well combined.
- Heat oil in a pan over medium heat.
- Scoop about 2 tbsp of the mixture per cake and flatten slightly into patties.
- Fry for 2-3 minutes per side until golden brown and crispy.
- Drain on paper towels and serve hot with dipping sauce.
Notes
- For extra crispiness, add panko breadcrumbs to the mixture.
- If the mixture is too wet, add more cornstarch or flour.
- Serve with sweet chili sauce, lime mayo, or nuoc cham.
- Can be pan-fried, deep-fried, or air-fried.
