- 3 tbsp extra virgin olive oil
- 1 cup BBQ sauce (plus extra for serving)
- 1 tbsp smoked paprika
- 2 tsp garlic powder
- 1 tsp onion powder
- 1.5 tsp kosher salt, divided
- 1 tsp freshly ground black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss potatoes and red onion with olive oil, 1 tsp salt, 0.5 tsp pepper, smoked paprika, garlic powder, and onion powder. Spread evenly on the baking sheet and roast for 20 minutes.
- Pat chicken thighs dry. Rub with remaining salt and pepper. After 20 minutes, remove pan from oven, stir veggies, and nestle chicken among them.
- Roast for 20-25 minutes until chicken reaches 165°F (75°C) internally.
- Brush chicken generously with BBQ sauce and return to oven for 5-7 minutes. Optional: broil 1-3 minutes for char.
- Rest 5-10 minutes. Garnish with parsley and serve with extra BBQ sauce.
