Ingredients

- 250g steak, cut into ¾” cubes
- 1 Tbsp oyster sauce
- ½ Tbsp soy sauce
- ½ Tbsp fish sauce
- ½ tsp black soy sauce
- 1 big clove garlic, grated
- 1 tsp sugar
- ½ tsp black pepper
- 2 tsp cooking oil
- A handful cherry tomatoes, pierced with a knife
- Pickled red onion, optional
- Salad greens, optional
Instructions
- Marinate the beef: In a bowl, combine beef cubes, oyster sauce, soy sauce, fish sauce, sugar, black pepper, and garlic. Let marinate for 30 minutes.
- Coat the beef: Add cooking oil to the beef and toss until well-coated.
- Heat the pan: Heat a wok or skillet over medium-high heat until hot. Add a drizzle of cooking oil.
- Sear the beef: Place marinated beef cubes in the skillet, don’t move for 30 seconds to 1 minute.
- Shake it up: Once seared, gently shake the pan and flip the beef to sear the other side for 30-45 seconds.
- Add tomatoes: Toss in cherry tomatoes and let them sear for about 20 seconds.
- Cook to perfection: Continue cooking until beef is at desired doneness, about 3-5 minutes total.
- Serve: Plate the shaking beef with optional pickled onions and greens.

Quality matters; use good quality beef for the best flavor. Let beef come to room temperature before cooking for even cooking.
