Description

Creamy and flavorful seafood stuffed potatoes with shrimp and crawfish, bursting with Cajun goodness.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crawfish, chopped
  • 1 cup shredded Cajun cheese (like pepper jack)
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork, then rub with olive oil and sprinkle with salt.
  3. Bake the potatoes for about 1 hour or until tender.
  4. Prepare the filling by mixing shrimp, crawfish, Cajun cheese, cream cheese, sour cream, green onions, and Cajun seasoning in a bowl.
  5. Once the potatoes are cooled, slice them in half and scoop out some flesh to mix with the filling.
  6. Stuff the filling back into the potato skins and sprinkle remaining Cajun cheese on top.
  7. Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
