- 4 large russet potatoes
- 1 cup cooked shrimp, chopped
- 1 cup cooked crawfish, chopped
- 1 cup shredded Cajun cheese (like pepper jack)
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork, then rub with olive oil and sprinkle with salt.
- Bake the potatoes for about 1 hour or until tender.
- Prepare the filling by mixing shrimp, crawfish, Cajun cheese, cream cheese, sour cream, green onions, and Cajun seasoning in a bowl.
- Once the potatoes are cooled, slice them in half and scoop out some flesh to mix with the filling.
- Stuff the filling back into the potato skins and sprinkle remaining Cajun cheese on top.
- Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
