- 8 ounces linguine pasta
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup dry white wine
- 1 cup shrimp, peeled and deveined
- 1 cup scallops
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese (optional)
Instructions
- Boil a large pot of salted water and cook linguine according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 60 seconds.
- Add halved cherry tomatoes, cooking for 2-3 minutes until softened.
- Pour in the dry white wine and simmer for 3-5 minutes.
- Add shrimp and scallops, cooking until opaque, about 4-5 minutes.
- Stir in heavy cream, season with salt and pepper, and add pasta water if needed.
- Toss the cooked linguine with the sauce and serve garnished with parsley and Parmesan cheese if desired.
Notes
Serve with garlic bread and a light salad. This dish can be customized with different seafood or pasta types.
