- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1/4 cup orange juice, freshly squeezed
- 2 tablespoons orange zest
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 cups old-fashioned oatmeal
- 1/2 teaspoon kosher salt
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 375°F (190°C).
- Line 3 large baking sheets with parchment paper.
- Cream together the butter and sugar until smooth and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each.
- Pour in the orange juice, orange zest, and vanilla extract.
- Turn off the mixer and gradually add the flour, oatmeal, and salt, mixing on low speed until just combined.
- Fold in the raisins and walnuts with a spatula.
- Scoop dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-14 minutes until lightly golden brown on edges.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Store cookies in an airtight container for up to 5 days. Freeze for longer storage.
