Description

Delightful cookies combining oats, raisins, and orange zest for a nostalgic treat.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup orange juice, freshly squeezed
  • 2 tablespoons orange zest
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oatmeal
  • 1/2 teaspoon kosher salt
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line 3 large baking sheets with parchment paper.
  3. Cream together the butter and sugar until smooth and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each.
  5. Pour in the orange juice, orange zest, and vanilla extract.
  6. Turn off the mixer and gradually add the flour, oatmeal, and salt, mixing on low speed until just combined.
  7. Fold in the raisins and walnuts with a spatula.
  8. Scoop dough onto prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 12-14 minutes until lightly golden brown on edges.
  10. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
