- For Schezwan Sauce:
- 8–10 dried red chilies (soaked)
- 4 garlic cloves
- 1-inch ginger
- 2 tbsp tomato ketchup
- 1 tbsp soy sauce
- 1 tsp vinegar
- 1 tsp sugar
- 2 tbsp oil
- Toppings:
- 200g paneer (cottage cheese), cubed
- 1 cup mixed bell peppers (thinly sliced)
- 1 onion (thinly sliced)
- 1 cup shredded mozzarella cheese
- ¼ cup grated processed cheese
- 1 tsp red chili flakes (optional)
- 1 tsp oregano
- 2 tbsp chopped spring onions (for garnish)
Instructions
- Prepare Schezwan Sauce: Blend soaked chilies, garlic, and ginger into paste. Heat oil, sauté paste for 2 mins. Add ketchup, soy sauce, vinegar, sugar. Cook until oil separates.
- Marinate Paneer: Toss paneer cubes with 2 tbsp Schezwan sauce. Let sit for 15 mins.
- Assemble Pizza: Preheat oven to 475°F (245°C). Dust crust with cornmeal. Spread remaining Schezwan sauce as base. Layer with marinated paneer, bell peppers, and onions.
- Add Cheese: Sprinkle mozzarella and processed cheese. Top with chili flakes and oregano.
- Bake: Bake for 12-15 mins until crust is golden and cheese bubbles.
- Serve: Garnish with spring onions. Slice and serve hot.

- Adjust chili quantity for preferred spice level
- For crispier crust, pre-bake for 5 mins before adding toppings
