A quick and easy recipe for Scallion Chicken featuring tender chicken thighs marinated in soy and oyster sauces, cooked to perfection with fresh scallions.

- 1 lb chicken thighs (skin on/off, boneless or bone-in)
- 2 tbsp regular soy sauce
- 1 tbsp dark soy sauce (optional)
- 1 tbsp oyster sauce
- 1/2 tsp black pepper
- 1 tbsp corn starch
- 1 tbsp oil (vegetable or canola)
- 5 scallions, sliced (white and green parts separated)
Instructions
- In a bowl, combine chicken thighs with regular soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Let it marinate for at least 10 minutes.
- While the chicken marinates, slice scallions, keeping the white parts separate from the green.
- Heat oil in a non-stick skillet over medium heat until shimmering.
- Add marinated chicken to the skillet and pan-fry for 7-9 minutes until browned and cooked through.
- Add the white parts of the scallions to the pan and cook for 2-3 minutes until softened.
- Stir in the green parts of the scallions and cook for an additional 10-20 seconds to wilt.
- Serve hot over steamed rice or noodles, garnished with extra scallions if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For best flavor, marinate the chicken the night before.
