Ingredients

  • 2 pounds small potatoes (like baby potatoes or new potatoes)
  • 1 cup chicken or vegetable broth
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and scrub the potatoes thoroughly under cold water. If any are particularly large, cut them in half for uniform cooking.
  2. In a mixing bowl, combine the broth, olive oil, garlic powder, onion powder, rosemary, thyme, salt, and pepper. Stir well until mixed.
  3. Place the washed potatoes in your crockpot. Pour the broth mixture evenly over the potatoes, ensuring they’re well coated.
  4. Cover the crockpot with a lid. Cook on low for 6-8 hours or on high for 3-4 hours until fork-tender.
  5. If able, stir the potatoes occasionally during cooking and add more broth if necessary to prevent drying out.
  6. Once ready, garnish with fresh parsley before serving.
