- 1 cup chicken or vegetable broth
- 3 tablespoons olive oil

- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash and scrub the potatoes thoroughly under cold water. If any are particularly large, cut them in half for uniform cooking.
- In a mixing bowl, combine the broth, olive oil, garlic powder, onion powder, rosemary, thyme, salt, and pepper. Stir well until mixed.
- Place the washed potatoes in your crockpot. Pour the broth mixture evenly over the potatoes, ensuring they’re well coated.
- Cover the crockpot with a lid. Cook on low for 6-8 hours or on high for 3-4 hours until fork-tender.
- If able, stir the potatoes occasionally during cooking and add more broth if necessary to prevent drying out.
- Once ready, garnish with fresh parsley before serving.
