Description

A hearty and comforting soup featuring savory sausage and fresh zucchini, perfect for chilly evenings.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb ground lean sweet Italian turkey sausage
  • 1 cup onion, diced
  • 4 garlic cloves, minced
  • 2 ribs celery, diced
  • 1 green bell pepper, diced
  • 1 lb zucchini, cut into half moons
  • 4 cups low sodium chicken broth
  • 28 oz can diced tomatoes with Italian seasoning
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large soup pot over medium-high heat.
  2. Cook the ground turkey sausage until browned, about 8 minutes.
  3. Add the diced onion, celery, bell pepper, and minced garlic; sauté for 3-4 minutes.
  4. Pour in the chicken broth and diced tomatoes, adding the oregano, salt, and pepper.
  5. Let it simmer for 5-10 minutes.
  6. Toss in the zucchini and cook for another 5-7 minutes.
  7. Serve with garnishes of Parmesan cheese and herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. You can add other vegetables or noodles as desired.
