Ingredients

- 1 tbsp olive oil
- 1 lb ground lean sweet Italian turkey sausage
- 1 cup onion, diced
- 4 garlic cloves, minced
- 2 ribs celery, diced
- 1 green bell pepper, diced
- 1 lb zucchini, cut into half moons
- 4 cups low sodium chicken broth
- 28 oz can diced tomatoes with Italian seasoning
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large soup pot over medium-high heat.
- Cook the ground turkey sausage until browned, about 8 minutes.
- Add the diced onion, celery, bell pepper, and minced garlic; sauté for 3-4 minutes.
- Pour in the chicken broth and diced tomatoes, adding the oregano, salt, and pepper.
- Let it simmer for 5-10 minutes.
- Toss in the zucchini and cook for another 5-7 minutes.
- Serve with garnishes of Parmesan cheese and herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. You can add other vegetables or noodles as desired.
