Ingredients

  • 1 package (9 oz) of three-cheese tortellini
  • 1 lb Italian sausage
  • 1 cup sweet potatoes, diced
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Brown the sausage in a large pot with olive oil over medium heat for 5-7 minutes.
  2. Add the sweet potatoes and minced garlic, sauté for about 5 minutes.
  3. Pour in the broth and bring to a boil.
  4. Add the tortellini and cook according to package directions, about 3-5 minutes.
