Ingredients

- 1 package (9 oz) of three-cheese tortellini
- 1 lb Italian sausage
- 1 cup sweet potatoes, diced
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Brown the sausage in a large pot with olive oil over medium heat for 5-7 minutes.
- Add the sweet potatoes and minced garlic, sauté for about 5 minutes.
- Pour in the broth and bring to a boil.
- Add the tortellini and cook according to package directions, about 3-5 minutes.
- Stir in the spinach and cream, cooking until the spinach wilts.
- Season with salt and pepper to taste. Serve hot!
Notes
For added flavor, consider adding a pinch of red pepper flakes for a kick. Leftovers can be stored in an airtight container for up to 4 days.
