- 1 (14-ounce) package of beef smoked sausage, sliced
- 1 large onion, diced
- 1 teaspoon Italian seasoning
- Pinch of black pepper
- 1/2 teaspoon ground white pepper
- 4 cloves garlic, pressed
- 3 small russet potatoes, peeled and diced
- 6 cups chicken stock
- 2 (15-ounce) cans organic navy beans, drained and rinsed
- 2 cups chopped kale
- 1 tablespoon chopped parsley
- 1/2 teaspoon lemon juice
Instructions
- Gather and prepare all ingredients.
- Heat a large soup pot over medium-high heat without added oil.
- Sear the sausage slices for 4-5 minutes until browned.
- Add diced onion, Italian seasoning, black pepper, and white pepper; sauté for 3-4 minutes.
- Stir in garlic for the last minute until fragrant.
- Add diced potatoes and chicken stock; cover and simmer for 12 minutes.
- Add navy beans and simmer for an additional 10 minutes.
- Turn off heat and stir in chopped kale, parsley, and lemon juice.
- Ladle into bowls and serve with crusty bread.
Notes
For a thicker soup, mash a few potatoes against the pot and stir back in. For added spice, consider blending in jalapeños.
