Description

A comforting soup packed with flavorful smoked beef sausage, vibrant kale, and creamy navy beans. Perfect for nourishing meals with family and friends.


Ingredients

  • 1 (14-ounce) package of beef smoked sausage, sliced
  • 1 large onion, diced
  • 1 teaspoon Italian seasoning
  • Pinch of black pepper
  • 1/2 teaspoon ground white pepper
  • 4 cloves garlic, pressed
  • 3 small russet potatoes, peeled and diced
  • 6 cups chicken stock
  • 2 (15-ounce) cans organic navy beans, drained and rinsed
  • 2 cups chopped kale
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon lemon juice

Instructions

  1. Gather and prepare all ingredients.
  2. Heat a large soup pot over medium-high heat without added oil.
  3. Sear the sausage slices for 4-5 minutes until browned.
  4. Add diced onion, Italian seasoning, black pepper, and white pepper; sauté for 3-4 minutes.
  5. Stir in garlic for the last minute until fragrant.
  6. Add diced potatoes and chicken stock; cover and simmer for 12 minutes.
  7. Add navy beans and simmer for an additional 10 minutes.
  8. Turn off heat and stir in chopped kale, parsley, and lemon juice.
  9. Ladle into bowls and serve with crusty bread.

Notes

For a thicker soup, mash a few potatoes against the pot and stir back in. For added spice, consider blending in jalapeños.
