- Olive oil for cooking

Instructions
- Brown the sausage in a large pot with olive oil over medium heat until golden-brown, about 5-7 minutes.
- Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant, about 3-4 minutes.
- Stir in the diced potatoes and pour in the broth; bring to a rolling boil, about 5 minutes.
- Reduce heat to a simmer and cover the pot; cook until potatoes are tender, approximately 15-20 minutes.
- Stir in the heavy cream and shredded cheese, mixing until melted and well combined.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and enjoy hot with crusty bread or a fresh side salad.
Notes
For a lighter version, substitute heavy cream with half-and-half. Feel free to customize with seasonal vegetables.
