Description

A comforting and nostalgic bowl of sausage potato soup, rich in flavors and perfect for chilly evenings.


Ingredients

  • 2 large potatoes, diced
  • 1 pound sausage, sliced or crumbled
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Crusty bread or side salad for serving

Instructions

  1. Brown the sausage in a large pot with olive oil over medium heat until golden-brown, about 5-7 minutes.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant, about 3-4 minutes.
  3. Stir in the diced potatoes and pour in the broth; bring to a rolling boil, about 5 minutes.
  4. Reduce heat to a simmer and cover the pot; cook until potatoes are tender, approximately 15-20 minutes.
  5. Stir in the heavy cream and shredded cheese, mixing until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and enjoy hot with crusty bread or a fresh side salad.

Notes

For a lighter version, substitute heavy cream with half-and-half. Feel free to customize with seasonal vegetables.
