Description

A comforting and delicious pasta dish featuring roasted butternut squash, Brussels sprouts, and smoky sausage, all ready in just 25 minutes.


Ingredients

Scale
  • 3 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil (for roasting squash)
  • Salt and pepper (to taste)
  • 340 g Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil (for roasting Brussels sprouts)
  • 225 g bow tie pasta
  • 1 tablespoon olive oil (for cooking the sausage)
  • 340 g cooked smoked sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F). Toss the cubed butternut squash with olive oil, salt, and pepper, and spread on a baking sheet.
  2. Roast for 15-20 minutes, flipping halfway through.
  3. While the squash roasts, prepare the Brussels sprouts and roast them for 20-30 minutes until crispy.
  4. Bring salted water to a boil and cook the bow tie pasta according to package directions (about 8-10 minutes).
  5. In a skillet, heat olive oil and cook sliced sausage until browned.
  6. Add minced garlic and cook until fragrant, then mix in butter.
  7. Toss in the drained pasta with reserved pasta water and add roasted vegetables, sausage, and thyme. Mix well.
  8. Serve immediately, garnished as desired.

Notes

Feel free to swap pasta types and add your favorite vegetables. This dish also tastes great as leftovers and can be meal-prepped.
