A comforting and delicious pasta dish featuring roasted butternut squash, Brussels sprouts, and smoky sausage, all ready in just 25 minutes.

- 3 cups butternut squash, peeled, seeded, and cubed
- 1 tablespoon olive oil (for roasting squash)
- Salt and pepper (to taste)
- 340 g Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil (for roasting Brussels sprouts)
- 225 g bow tie pasta
- 1 tablespoon olive oil (for cooking the sausage)
- 340 g cooked smoked sausage
- 5 cloves garlic, minced
- 2 tablespoons butter
- ¼ teaspoon smoked paprika
- Fresh thyme leaves
Instructions
- Preheat oven to 200°C (400°F). Toss the cubed butternut squash with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast for 15-20 minutes, flipping halfway through.
- While the squash roasts, prepare the Brussels sprouts and roast them for 20-30 minutes until crispy.
- Bring salted water to a boil and cook the bow tie pasta according to package directions (about 8-10 minutes).
- In a skillet, heat olive oil and cook sliced sausage until browned.
- Add minced garlic and cook until fragrant, then mix in butter.
- Toss in the drained pasta with reserved pasta water and add roasted vegetables, sausage, and thyme. Mix well.
- Serve immediately, garnished as desired.
Notes
Feel free to swap pasta types and add your favorite vegetables. This dish also tastes great as leftovers and can be meal-prepped.
