Description

A hearty and comforting breakfast casserole featuring crispy hashbrowns, savory sausage, and fluffy eggs, perfect for brunch gatherings or busy weekday mornings.


Ingredients

  • 1 pound turkey sausage, ham, or bacon
  • 1 bag (30 oz) frozen hashbrowns
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or Pepper Jack)
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the sausage, ham, or bacon over medium heat until browned and cooked through, about 5-7 minutes.
  3. In a large bowl, combine the cooked meat, frozen hashbrowns, and shredded cheese.
  4. In another bowl, whisk together the eggs, milk, salt, pepper, onion powder, and garlic powder until smooth.
  5. Add the egg mixture to the hashbrown mixture and stir to combine.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Bake for 45-50 minutes or until the casserole is set and golden on top.
  8. Let cool for a few minutes before slicing and garnishing with chopped green onions.

Notes

For extra crispy hashbrowns, bake the potatoes for 5-10 minutes in the greased pan before adding the fillings.
