Description

A cozy and satisfying breakfast casserole made with crispy hash browns, savory sausage, and creamy eggs.


Ingredients

  • 1 lb sausage
  • 1 package (30 oz) frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 12 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned and cooked through, about 8 minutes.
  3. In a large mixing bowl, combine the cooked sausage, frozen hash browns, cheddar cheese, onion, bell pepper, eggs, milk, salt, and pepper. Mix until well combined.
  4. Grease a 9×13 baking dish with butter and pour in the mixture, spreading it evenly.
  5. Bake for 45-50 minutes, or until the top is golden brown and the eggs are set.
  6. Allow to cool for 5-10 minutes before serving.

Notes

Allow leftovers to cool before storing in the fridge for up to 3 days, or freeze for up to 3 months. Use room temperature eggs and milk for fluffier results.
