Description

A vibrant and hearty salad combining fresh vegetables, creamy avocado, and zesty lime dressing, perfect for any occasion.


Ingredients

  • 4 cups mixed greens (baby spinach and romaine)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 diced jalapeño (remove seeds for less heat)
  • Juice of 2 limes (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. In a large mixing bowl, combine your mixed greens as the crisp base. Make sure they are thoroughly rinsed.
  2. Toss in the chickpeas and black beans for protein and substance.
  3. Add in the diced tomatoes, corn, jalapeños, and red onion, brightening up the salad.
  4. In a separate bowl, whisk together lime juice, olive oil, salt, and pepper, then drizzle over the salad and toss gently.
  5. Fold in the diced avocado and cilantro carefully to avoid mashing the avocado.
  6. Taste and adjust seasonings to your preference.
