- 4 cups mixed greens (baby spinach and romaine)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- 1 small red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1 diced jalapeño (remove seeds for less heat)
- Juice of 2 limes (freshly squeezed)
- 3 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine your mixed greens as the crisp base. Make sure they are thoroughly rinsed.
- Toss in the chickpeas and black beans for protein and substance.
- Add in the diced tomatoes, corn, jalapeños, and red onion, brightening up the salad.
- In a separate bowl, whisk together lime juice, olive oil, salt, and pepper, then drizzle over the salad and toss gently.
- Fold in the diced avocado and cilantro carefully to avoid mashing the avocado.
- Taste and adjust seasonings to your preference.
