- 1 lb breakfast sausage (mild or spicy)
- 2 cups shredded sharp cheddar cheese
- 1 can (10 oz) Rotel diced tomatoes with green chilies, well drained
- 1½ cups Bisquick baking mix
- ½ tsp garlic powder (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the breakfast sausage, cheddar cheese, drained Rotel, Bisquick mix, and garlic powder if using.
- Mix well using your hands until fully combined, about 2-3 minutes.
- Roll the mixture into 1-inch balls and place them on the prepared baking sheet, leaving space in between.
- Bake in the oven for 20-25 minutes, or until golden brown and cooked through.
- Let cool slightly, then serve warm with your favorite dipping sauce.
Notes
Make sure to drain the Rotel well to avoid sogginess. You can also freeze uncooked sausage balls for later baking.
