  • 1 cup fresh ricotta cheese
  • 2 tablespoons hot honey
  • Optional: Chopped fresh herbs (like parsley or dill), chili flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and peel the carrots if necessary, cutting them into even pieces of about 2-3 inches.
  2. In a large mixing bowl, combine the carrots with olive oil, salt, and black pepper, tossing until evenly coated.
  3. Spread the seasoned carrots on a baking sheet lined with parchment paper. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
  4. In a medium bowl, whip the ricotta cheese until fluffy, about 2-3 minutes, adjusting seasoning as desired.
  5. Serve the roasted carrots on a platter, dollop with whipped ricotta, and drizzle with hot honey. Garnish with fresh herbs or chili flakes if desired.
