Description

Delightful no-bake Rice Krispie Christmas Puddings that are fun to make and perfect for holiday gatherings.


Ingredients

Scale
  • 200 g Milk Chocolate
  • 50 g Unsalted Butter
  • 180 g Mini Marshmallows
  • 100 g Rice Krispies (or Coco Pops)
  • 50 g White Chocolate (for decoration)
  • White Sugarpaste (or Pre-coloured Sugarpaste)
  • Green Food Colour Gel
  • Red Food Colour Gel

Instructions

  1. In a saucepan, melt 200 g milk chocolate and 50 g unsalted butter over low to medium heat, stirring well.
  2. Add 180 g mini marshmallows to the melted mixture and stir until fully melted and combined.
  3. In a large mixing bowl, pour in 100 g Rice Krispies and the marshmallow chocolate mixture, stirring until fully coated.
  4. Dampen your hands and roll the mixture into balls, placing each on a baking tray lined with parchment paper.
  5. Refrigerate for about 30 minutes to firm up the puddings.
  6. Melt 50 g white chocolate and color sugarpaste using green and red food gels, rolling them into holly leaves and berries.
  7. Once puddings are chilled, drizzle with melted white chocolate and decorate with the sugarpaste holly leaves and berries.

Notes

Store in an airtight container in the fridge for up to a week or freeze for a month. Can be made in advance without decorations.
