A unique twist on traditional lemon bars featuring a crunchy soda cracker crust and a zesty lemon filling, perfect for any occasion.

- 1 cup all-purpose flour
- 1 3/4 cups crushed soda crackers (approximately 1 box)
- 1/2 cup sugar
- 1/2 cup shredded coconut (optional)
- 1 tsp baking powder
- 3/4 cup unsalted butter, melted
- 1 can lemon pie filling (21 oz)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Melt the unsalted butter in a small saucepan or microwave and let it cool slightly.
- Crush the soda crackers into fine crumbs using a food processor or rolling pin.
- In a large bowl, combine crushed soda crackers, flour, sugar, shredded coconut, and baking powder until blended.
- Pour the melted butter into the dry mixture, mixing until crumbly.
- Press about 3/4 of the crumb mixture into the bottom of the greased baking dish to form the crust.
- Spread the lemon pie filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the lemon filling and gently press it down.
- Bake in the preheated oven for about 30 minutes, or until the top is golden brown and slightly bubbly.
- Let it cool completely in the pan before slicing into bars.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They can also be frozen for longer storage.
