Description

A unique twist on traditional lemon bars featuring a crunchy soda cracker crust and a zesty lemon filling, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 3/4 cups crushed soda crackers (approximately 1 box)
  • 1/2 cup sugar
  • 1/2 cup shredded coconut (optional)
  • 1 tsp baking powder
  • 3/4 cup unsalted butter, melted
  • 1 can lemon pie filling (21 oz)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Melt the unsalted butter in a small saucepan or microwave and let it cool slightly.
  3. Crush the soda crackers into fine crumbs using a food processor or rolling pin.
  4. In a large bowl, combine crushed soda crackers, flour, sugar, shredded coconut, and baking powder until blended.
  5. Pour the melted butter into the dry mixture, mixing until crumbly.
  6. Press about 3/4 of the crumb mixture into the bottom of the greased baking dish to form the crust.
  7. Spread the lemon pie filling evenly over the crust.
  8. Sprinkle the remaining crumb mixture over the lemon filling and gently press it down.
  9. Bake in the preheated oven for about 30 minutes, or until the top is golden brown and slightly bubbly.
  10. Let it cool completely in the pan before slicing into bars.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They can also be frozen for longer storage.
