Decadent Red Velvet Hot Chocolate Cookies with a rich chocolate flavor and gooey marshmallow surprises.


Ingredients

  • 1 cup instant chocolate pudding mix
  • 1/2 cup hot cocoa mix
  • 1/2 cup cocoa powder, sifted

  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 cups milk chocolate chips
  • 2 cups white chocolate chips
  • 4 cups mini marshmallows

Instructions

  1. Sift together flour, cocoa powder, instant chocolate pudding mix, hot cocoa mix, espresso powder, baking soda, and salt in a medium bowl.
  2. Cream butter with brown sugar and granulated sugar until light and fluffy using an electric mixer.
  3. Add eggs one at a time, incorporating well, then mix in vanilla extract and red food coloring.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Fold in milk chocolate chips, white chocolate chips, and mini marshmallows.
  6. Chill the dough in 4-ounce balls for at least 2 hours.
  7. Preheat oven to 350°F (175°C) and bake dough balls on parchment-lined sheets for 17-20 minutes.
  8. Cool on baking sheets for 10 minutes before transferring to a wire rack.
